We’re excited to debut a new class from Raquel of Norte 54! Pan de Muerto is a traditional Mexican bread made to celebrate Día de Muertos, or Day of the Dead, on November 2nd. It is a bread steeped in tradition and symbolism. Made to be placed at a loved one’s grave or ofrenda (altar), its shape resembles a skull with bones. It is a sweet bread scented with orange blossom water and orange zest.

In this class, not only will you make Pan de Muerto, you’ll also learn a regional variety, Pan de Mitla, originating from Oaxaca. It is based on pan de yema (a rich egg-yolk bread), giving it a denser, brioche-like texture with hints of anise. Like many Mexican pan dulces, the origin of these breads are a blend of colonial and indigenous roots evolving to become a mainstay and representative of Mexican bread culture.

Class will conclude with a tasting of our baked goods with champurrado, plus a light dinner served with wine, beer, and N/A beverages. Leftover bread will be packed up for students to take home.
